All- Clad Video: The Importance of a Pan That Heats Evenly

In this video, Chef Paul Kahan discusses the importance of cooking with a pan that responds well to changes in temperature.  He says that a good pan helps regulate and control heat while cooking.  He provides us with the simple instructions for cooking garlic to make a tomato sauce to illustrate how well All-Clad responds to the temperature changes needed in this recipe.  The following are the instructions he provides for how to cook garlic to make a tomato sauce:


Cooking Garlic to Make a Tomato Sauce


1. Preheat the pan

2. Add oil and garlic to the pan

3. Sweat the garlic until it gets aromatic, but not toasted

4. Add the other ingredients for your tomato sauce

5. Bring the pan up to a boil

6. Once boiling, reduce the heat to medium 

7. Cook uncovered until the sauce is reduced by about 1/3

8. Ladle it over pasta


You will notice that these instructions include changing the temperature of the pan several times and it is important to use a heat-efficient pan that will respond to these heat changes well.  All-Clad is a premier brand for heat conductivity.
