How to Sear a Steak

The best way to get a great sear on a steak is with a stainless steel pan, and who makes a better stainless steel pan than All-Clad?  In the following video, created by All-Clad, Chef Paul Kahan describes how to sear a perfect steak with his All-Clad Stainless 12" Frypan.

According to Chef Kahan, the first step to the perfect sear is preheating the pan.  This, according to All-Clad, is also an important step to keeping your food from sticking when you cook with stainless steel.

Before putting anything into the pan, you should be able to drop water into the pan and watch it bubble and steam.

  Once the pan is heated, you can add oil.

After your oil is spread around the pan, you can add your steak.  In this video, Chef Kahan recommends marinated steak.

Now here is the most important part!  Do not move the steak once it has been placed in your pan.  This is another step that is important for many things that you cook for two main reasons.  The first is that when you lift food off the pan, you remove heat from it and make it harder for that piece of meat to get a true sear.  The second reason is that most food will stick for a short time before it gets that sear and releases itself, so if you attempt to flip it too early it will stick to the pan and you will be left with food residue in the bottom of the pan and no delicious crust on your food.

Cook until the steak is a golden brown, then you can flip the steak and it will easily release from the pan.  In the video, Chef Kahan even flips his steak with just a fork to show how easy it is.

Now that your steak has a beautiful sear on it, you can put it into a preheated 500°F oven to cook the rest of the way.

Another important step to a delicious steak is it let it rest for 3-5 minutes to allow the juices to settle before cutting.
