As I have mentioned before, we have some amazing products, many of which I have bought for myself.  One of these products, which has been very popular lately, is the OXO Handheld Spiralizer.  We also have the more heavy-duty one for people who like to spiralize often, the OXO Spiralizer, and some similar products from other brands, the Microplane Dual Barrel Spiral Slicer and the HIC Easy Turn Spiral Vegetable Slicer.


After I took this spiralizer home and made some zucchini noodles, I began looking up recipes to use them and remembered very quickly that I don't like tomatoes or pasta sauce (yes, I am weird, I know).  Unfortunately, most of the easier recipes include these ingredients.  So, it took a little extra searching and a bit of experimenting, but I wanted to share with you the Zucchini Noodle Shrimp Scampi:


Zucchini Noodle Shrimp Scampi

Skinny Shrimp Scampi with Zucchini Noodles Recipe

Ingredients

  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 tbsp Minced Garlic
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1 lb cooked Shrimp
  • 2 large Zucchini
  • 1 cup Chicken Broth
  • 1/4 cup Lemon Juice
  • 1 cup Parmesan Cheese

Instructions

  1. Using your OXO Handheld Spiralizer, or one of the other spiral slicers mentioned above, cut the 2 Zucchini into noddles. Place in a bowl and set aside.

  

2. In your All-Clad Stainless 4 Quart Saute Pan with Lid, heat the olive oil and cook the onion and garlic until soft.  Add crushed red pepper flakes and cook for one more minute. 

3. Add chicken broth and lemon juice.  Stir.

4. Add shrimp.  Stir.

5. Cook for just a few minutes, make sure you do not cook for too long because shrimp is already cooked. 

6. Season with salt and pepper.

7. Remove from heat.  Add zucchini noodles and toss. 

8. Top with Parmesan Cheese and serve while warm.
